Simple Omelette

A basic omelette made with simple ingredients and whatever leftovers you have.
Easy, flexible, and good for any time of day.

Ingredients

  • 2 eggs
  • Avocado oil (preferred)
  • Salt and pepper to taste

Optional

  • Cooked meat (any leftover meat you like)
  • Vegetables (any leftover veggies that go well together)
  • Garlic powder or other seasonings (optional)
  • Paleo-friendly sauces (optional, used lightly)

Instructions:

  1. Prepare the Eggs: Crack the eggs into a bowl. Season with salt and pepper and beat lightly.
  2. Heat the Pan: Heat a skillet over medium-low heat on an electric stovetop. Add avocado oil and let it get hot and lightly shimmering.
  3. Hot Oil First: Make sure the oil is hot, then pour the eggs into the pan and let them cook gently until mostly set.
  4. Add Fillings (Optional): Add any warmed leftover meat or vegetables to one side of the omelette. Sprinkle with garlic powder or other seasonings if using.
  5. Fold and Finish: Fold the omelette over the filling and cook briefly until set.
  6. Serve: Slide onto a plate and serve warm.

Optional Add-Ons

  • Extra seasoning if desired
  • A small amount of Paleo-friendly sauce

How I Eat This


I always wait until the oil is hot before adding eggs. I keep it simple with salt and pepper and use leftovers when I have them.
