Ingredients
- 2 eggs
- Avocado oil (preferred)
- Salt and pepper to taste
Optional
- Cooked meat (any leftover meat you like)
- Vegetables (any leftover veggies that go well together)
- Garlic powder or other seasonings (optional)
- Paleo-friendly sauces (optional, used lightly)
Instructions:
- Prepare the Eggs: Crack the eggs into a bowl. Season with salt and pepper and beat lightly.
- Heat the Pan: Heat a skillet over medium-low heat on an electric stovetop. Add avocado oil and let it get hot and lightly shimmering.
- Hot Oil First: Make sure the oil is hot, then pour the eggs into the pan and let them cook gently until mostly set.
- Add Fillings (Optional): Add any warmed leftover meat or vegetables to one side of the omelette. Sprinkle with garlic powder or other seasonings if using.
- Fold and Finish: Fold the omelette over the filling and cook briefly until set.
- Serve: Slide onto a plate and serve warm.
