Ingredients:
- 2 medium sweet potatoes
 - 1 tablespoon extra virgin olive oil (EVOO)
 - ¼ teaspoon Himalayan salt
 - ½ teaspoon ground cinnamon
 
Instructions:
- Preheat your oven to 400°F (200°C).
 - Wash and scrub the sweet potatoes. Pat them dry with a paper towel.
 - Drizzle the EVOO over the whole sweet potatoes and sprinkle with Himalayan salt and cinnamon. Rub to coat evenly.
 - Wrap each sweet potato in aluminum foil and place them on a baking sheet.
 - Bake for 45-60 minutes, or until tender when pierced with a fork.
 - Carefully unwrap the foil and serve warm.
